Mekelesha is the secret ingredient that will lift your stews to the next level of food heaven. The blend consists of seven hand-roasted spices selected by Amaarech herself. Among them we find Ethiopian cardamom, nutmeg, and pepper, giving this blend something of an autumny profile. Our mekelesha is very concentrated so a little goes a long way.
Mekelesha is used in many red stews such as Ye'Metbesha Miser (red lentil stew) and Ye'Duba Wot (squash stew)—both recipes can be found in my ebook—but it will add flavor to all slow-cooked stews. It is normally added at the end of cooking.
Ingredients: Ethiopian nutmeg (gewz), Ethiopian cardamom (korerima), cinnamon, black pepper, cumin, Indian long pepper (timiz), and cloves.
